It's ok to be a little indulgent some times right?
My malteaser brownies are simple but delicious - the proof is in the bake!
I have taken an easy brownie recipe and added a few twists.
Ingredients:
185g unsalted butter
185g of good dark chocolate
50g of milk chocolate or white chocolate
120g of malteasers (1large bag)
40g of co co powder
85g of plain flour
1tsp of baking powder
3 large eggs
275g of golden caster sugar
25g of crushed walnuts
Method:
1. Simmer a pan of hot water on the cooker, rest a medium sized bowl over the top containing the butter, chopped into small pieces and the plain chocolate only, broken into squares.
Do not let the water touch the bottom of the bowl, if it does, place a small ramekin in the pan to sit the bowl on top of.
At this point pre heat the oven to 180 degrees and grease and line a 20cm by 20cm shallow tin. If you use a smaller one this will just result in thicker brownies.
2. Melt the mixture together until it becomes smooth. Take it off the heat and set to one side to cool a little.
3. In a large mixing bowl add the eggs and sugar together. Use an electric whisk, on a high speed to cream together the mixture. It should double in size. This should take roughly 3 minutes.
4. Fold in the melted chocolate and butter mixture to the eggs and sugar using a spatular.
5. Sieve in the flour, baking powder and co co powder, using the same action fold them in.
The mixture will gradually become beautifully fudgy.
6. Roughly chop the malteasers, milk chocolate and walnuts. Fold these final ingredients into the mixture.
7. Pour the mixture into the baking tin and pop it into the oven for 20-25 minutes.
Once cracks form on the top and a skewer comes out almost clean take them out and let them cool.
