After remembering a similar meal I used to eat at a friends house when I was younger, I made my own healthy variation this evening and it was delicious... Even if I do say so myself.
This recipe makes enough for two people
Ingredients:
1. 250g of Turkey mince
2. 2 cloves of garlic
3. 1 thumb sized piece of fresh ginger
4. 1 handful of fresh basil
5. 2-3 tablespoons of sit sauce (personal flavour)
6. 1 spring onion
7. 1 large courgette
8. 1 mango
9. 1 tablespoon of Pinenuts
Method:
1. Brown off the garlic, onions and ginger.
2. Add the turkey mince and simmer till cooked.
3. Add the basil, Pinenuts and soy sauce and warm through.
4. Grate the courgette into ribbons or 'spegetti strips' and dice the mango into small cubes.
5. Add the courgette and mango to the pan withy the turkey and just warm through for no longer than 2 minutes. You don't want to cook the courgette other wise it will become soft and watery.
6. Serve up and enjoy!
