My ginger flap jacks were a hit when I took them into work, I'd even go as far as to say one of the most loved so far.
Ingredients:
250g Oats
125g Butter
125g Brown Sugar
3 tablespoons of Golden Syrup
3 large pieces of Stem Ginger, (each of mine was about an inch long and thick)
1 tablespoon of the ginger syrup they are in
Method:
1. Combine all the ingredients, apart from the chocolate, in a processor and blend until they are well combined. Be careful you don't over blend as you still want an oaty texture to your flapjacks.
2. Spread into a lined baking tin, you want the flapjacks to be spread quite thickly, between 2-3 centre meters.
3. Bake for 15-20 minutes or until lightly brown.
4. Take out and leave to cool.
5.Cut into even squares.
6. Melt the dark chocolate, I do mine in a bowl over boiling water, and coat the flapjacks in the chocolate in a design of your choice.
7. Leave to cool and enjoy!
